Healthy Banana Nut Bread Recipe

This Banana Bread is not only soft, moist and delicious but it’s also dairy-free, gluten-free and refined sugar free. Serve it with some nut butter, homemade jam or spread some coconut yoghurt over the slice of it and top with some crushed raspberries – my favorite combo ;). If you have a sweet tooth add some more xylitol or honey, or if your diet allows use sugar instead of them.

Ingredients

  • 1 1/2 cup brown rice flour
  • 1/2 cup almond meal
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1 cup mashed bananas (about 3 large bananas)
  • 4 eggs, separated
  • 100g  unsweetened applesauce
  • 1 tsp. vanilla paste
  • 1/3 cup xylitol or raw honey
  • 2 tbsp. melted coconut oil
  • 1/2 cup pecans or any other nuts

Directions

  1. Grease a loaf tin (or use silicone loaf tin) and preheat oven to 177 C/350F.
  2. Combine almond meal, brown rice flour, baking soda, xylitol and salt in a bowl.
  3. Combine egg yolks, mashed bananas, vanilla paste, apple sauce and melted coconut oil. Mix them together.
  4. Beat the egg whites till they are thick and fluffy. Gently fold egg whites into egg yolk mixture.
  5. Lastly fold the dry ingredients into wet, until just combined. Don’t over-mix the batter.
  6. Pour the batter into loaf tin and bake for 50-60 min. Stick a wooden stick in to centre of the cake to tell if it is finished. If it comes out clean, then it is done.
  7. Allow to cool and enjoy 🙂
