Butter Bean Puree with Pomegranate Seeds

  • 235 g (1 can) drained and rinsed butter beans
  • 1 tsp ground cumin
  • 3 tbsp lemon juice + 1 tbsp of water
  • 1 tbsp extra virgin olive oil
  • 2 tbsp light tahini
  • 2 cloves garlic, crushed
  • salt and cracked black pepper to taste
  • pomegranate seeds for garnish

  1. Puree all ingredients in a blender/food processor until smooth.
  2. Spoon into serving dish and sprinkle with pomegranate seeds.
