Chicken & Zucchini Bites



New year, new start, new you…right? This is the best time of the year to get back to healthier eating habits and clean up your diet. Eating healthy and following clean eating diet doesn’t have to be boring. It is about eating naturally derived food that is tasty, healthy and good for you. There are so many tasty clean eating recipes out there. ¬†One of them is this chicken and zucchini bites recipe. They are juicy, tender, full of flavor, healthy, plus gluten free and paleo friendly.


  • 2 medium chicken breasts, minced
  • 1 grated zucchini
  • 1 garlic clove, minced
  • 2 stalks of spring onion, chopped
  • 3 tbsp coriander
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp crushed chilli flakes (optional)
  • 1 egg (optional)
  • coconut oil for cooking (or any other oil you prefer)



  1. Mix all ingredients together. Add more spices and salt if desired.
  2. Heat coconut oil in a pan over medium heat.
  3. Use tablespoon to scoop meatballs into the pan.
  4. Cook about 6 minutes on the first side, flip and cook an additional 5 minutes or until golden brown and cooked through.
