Healthy chicken lime soup with avocado

My lovely sister-in-law asked me to share a recipe that would have avocado in it, a fruit we both love so much. I had some ideas, one of them being a healthy chicken and lime soup with avocado. Weather haven’t been the greatest and I am down with a bit of flu, so I decided to make a soup. I did spice up my soup with some chilli, but if you don’t like spicy food leave the chilli out or use less of it. Instead of chicken you can use prawns or/and add some extra vegetables in to the soup.
Serves 2-4 people


  • 2 chicken breasts (boiled)
  • 200 g cherry vine tomatoes (cored and chopped)
  • 1 chopped celery stalk
  • 80 g onion, diced
  • 4 garlic cloves, minced
  • juice of 1 1/2  limes
  • 1 bunch of coriander, chopped
  • 5 cups chicken stock
  • 2 organic, low salt stock cubes (optional)
  • 1 small red chilli, chopped
  • sea salt
  • pepper
  • 1 tsp coconut oil for frying
  • 1 avocado, peeled and diced or sliced

  1. Boil chicken breast in a 5 cups of water till ready, about 15-20 min. Keep the liquid (you boiled chicken breasts in) for a stock.
  2. Heat coconut oil in a pan and cook onion for a few minutes, add garlic, chilli, chopped celery and cook for a few more minutes.
  3. Put a pot with chicken stock on a hob and pour ingredients from the pan in it. Add chopped tomatoes and bring it to boil. If you are using stock cubes add them too.
  4. Shred the chicken breasts and add them in to the pot. Season with a salt and pepper. Let the soup simmer till celery is cooked threw.
  5. When ready add lime juice and coriander.
  6. Top up with avocado slices and serve.
  7. Enjoy 🙂
