Healthy breakfast cookies

Cookies are not something I would eat often for my breakfast. They are something I would choose better as a dessert or a snack. One weekend I decided to change it up. I knew that I have to get up early next morning and have a long trip ahead, so I made them in a evening, ready for breakfast. These clean eating healthy cookies are sugar, dairy, egg and gluten (if using gluten free oats) free. Sweetness comes from banana, dried apricots and dates. For me they are sweet enough without sweetener and I did not add any honey, but  if you wish add some honey or any other natural sweetener in to them. You can use different nuts and  dried fruits in this recipe. They tasted really good eaten the next day. I took them with us to our road trip and wished that I would have made more of them. They are not only tasty and healthy, but they are good for you because they contain oats, which are good source of fibre that makes you feel full longer. Bananas are high in potassium, they supply proper carbohydrates by giving us energy, vitamin B6 and iron.

Makes about 12 small cookies


  • 1 cup oats
  • 1/2 cup chopped almonds
  • 10 chopped dates
  • 1/2 cup chopped dried apricots
  • 2 bananas, mashed
  • 1/4 cup melted coconut oil
  • 1/2 tsp salt
  • 3 tbsp lemon juice
  • honey (optional)

  1. Preheat oven to 200 C.
  2. Mix oats, chopped almonds, dates, apricots in a bowl. Or use food processor (like I did) and process almonds and oats first and then add other ingredients.
  3. Mash bananas and add them and all other ingredients in to the dry mix.
  4. Using your hands (or spoon) form the cookies and place them on a baking tray lined with parchment paper or silicone mat.
  5. Bake for about 20 minuter or till cookies turn golden.
  6. Let them cool and enjoy 🙂
